Tracked Piano

I take the vocal technique of tracking and record my Schimmel with a vocal mic (SM57…. its the same as a 58 without the spit guard). Record every single string, twice pan extreme left and right, does this work as a piano ideal for drama because its extreme perspective clears it well away from the dialogue channel?
